Cranberry and Lime Quinoa Salad Recipe

Add a new salad to your home cooking menu, and enjoy great taste and nutrition with this easy to make quinoa recipe. Share with friends and family any night of the week.

Ingredients:

1 1/2 cups Water
1 cup Uncooked Quinoa, rinsed
1 Lime, juiced
1/2 cup Dried Cranberries
1/2 cup Bell Pepper, diced
1 small Red Onion, diced
1/2 cup Carrots, minced
1/4 cup Fresh Cilantro, chopped
1/4 cup Almonds, sliced and toasted
1 1/2 tsp Curry Powder
Salt and Ground Black Pepper, to taste

Directions:

1. Bring water to a boil on high heat and add uncooked quinoa. Simmer on low heat until water is absorbed, approximately 15 to 20 minutes. Place cooked quinoa in bowl and put in the fridge until cold.

2. Remove quinoa from fridge and add cranberries, bill peppers, onion, carrots, almonds, cilantro and curry powder to the bowl. Pour lim juice over mixture, season with salt and pepper and mix well.

3. Serve and enjoy!
